I apologize for being a day late on this, since I did say I would write weekly by Wednesdays. But I’m a day late because…grief and sadness. Which I will not ruin your day with, unless you want to keep reading and read a tribute to my friend I have lost.
Grief and salad don't seem to be bedfellows, but I have to say, whenever I am hurting I am a sit down and nosh on a massive bowl of greens kind of girl. Not sure why. But it’s my go-to when things are hard. It’s as if I am trying to lighten the load of my way of being through salad. Also, chewing is oddly therapeutic for me. #weirdsensorythings
So while this is a simple recipe, it’s also a great one to have on hand. For the days when you want something easy, and delicious. And with a silly amount of flavor all things considered in a simple salad.
