Preserved Lemons! As promised!

FRIENDS! My apologies for the delay! My lovely customer service human just nudged me after watching the live and said ‘Hey! You didn’t send the preserved lemons with the recording.” So I have put it in that post and right here. :)
2 pounds meyer lemons (or mixed citrus) The thinner the skin and pith, the more enjoyable the final use. So thick skinned grapefruit are often a no go.
Aromatics, recommended aromatic blend to try?
5 bay leaves
20 peppercorns (my favorite is Baie Rose for this, but any peppercorn will do)
1 tablespoon cracked coriander seed
(Cumin, nigella, fenugreek, cinnamon sticks, allspice, mustard seeds, fennel seeds, celery seeds can all work beautifully for this purpose. Play with the combinations and see what emerges for you!)
