Y’all, this is a new favorite. It’s pizza adjacent, it’s delicious, and other than the slicing of the squash? It’s utterly speedy to make.
The version I show here is sliced on a mandoline, long ways. To create ribbons. But you could also just freaking cut up a zucchini in rounds, and layer them in a ‘shingle’ which is often how I do it. That would be fine too. I like the ribbons because it gave me little ‘homes’ for the sliced in half cherry tomatoes.
